Recipe salad: wild rice lobster

Recipe for a salad featuring wild rice and lobster in a spicy yogurt dressing - a great meatless main course or side dish.

This healthy, fast and easy to make vegetable and fruit salad makes a great side dish, desert, or first course for a family dinner or dinner party. This recipe serves 4.

INGREDIENTS:

2 cups cooked lobster, shelled, cooled and diced

½ cup golden raisins

3 cups mixed vegetables, defrosted (peas, carrots, corn)

1 cup cooked wild rice, cooled

3 cups yogurt

1 tbsp. garden herbs (parsley and dill) finely chopped

lettuce leaves to serve

METHOD:

Combine lobster, golden raisins, peas, carrots, corn, rice, yogurt, parsley and dill. Arrange lettuce leaves on a platter.

Spoon fish mixture on top. Serve chilled as a great meatless main course, or as a side dish to barbecued chicken or steak.
