baked potato recipe: spicy beef and cucumber

This baked potato recipe is topped with beef, lime juice, turtle beans and cucumber chunks in a spicy sauce - a great lunch or quick family dinner.

Serves 4

INGREDIENTS:

4 large baking potatoes, scrubbed and washed

2 tbsp. sunflower oil

4 oz. beef steak, cubed

1 onion, finely chopped

8 whole Polish dill pickles with garlic, drained and chopped

seasoning to taste

4 tbsp. sour cream to serve

margarine or butter for mashing potato

METHOD:

Preheat oven to 400 F (200 C). Bake potatoes for 1 hour until skins are slightly browned and crisp.

Meanwhile, heat sunflower oil in a frying pan. Add beef cubes and brown on all sides, about 5 minutes. Add onions, pickles and seasoning. Fry gently for 15 minutes, covered.

Remove potatoes and cut each one in half. Divide butter or margarine between each half and mash into potatoes. Put halves on serving plates and spoon spicy beef mixture on top. Serve hot garnished with sour cream as a great lunch or quick family dinner.
